Prep time- 15-20 mins
Ingredients:
- 2 tbsp vegetable oil
- 1 medium onion(finely chopped)
- 2 tomatoes (chopped finely)
- 2 green chillies
- 2 tbsp ginger garlic paste
- 1 Tbsp red chilli powder
- 1/2 tbsp turmeric powder
- 4 large eggs(whisked)
- Salt to taste
- Chopped coriander leaves
Method:-
1. In a non-stick pan, heat the oil over medium high heat, until shimmering. Add onions and stir till softened.
2. Add ginger garlic paste and stir for around 45 seconds.
3. Add tomatoes and green chillies and cook until tomatoes leaves it's moisture.
4. Add salt, red chilli powder and turmeric powder, and stir until oil separates from the paste, about 30-40 seconds.
5. Turn the heat to low. Add eggs and gently stir until the mixture begins to form soft curds, about 1 minute. Increase the heat to high and stir the mixture, breaking bigger clumps of egg apart.
6. Add coriander leaves and stir.
7. Remove from heat and serve, garnish with a tablespoon of butter and your tasty and easy scrambled eggs are ready to eat. Enjoy it with toasted bread.
